Dave began cooking on his visits to his grandmother when he was six years old. He's always been testing new ideas and feels at home in the kitchen. He began working at Sally's Apizza in 1995, and learned the pizza craft from his cousins Bobby and Ricky. They also introduced him to flavoring and learning how different foods react with one another.
In 1998, Dave began working as a cook at the Yale University Golf Course where he learned the essentials from a great chef on how to prepare for banquets, and handle the daily menu as well.
In 2001, Dave was invited to Chicago to help train a kitchen staff at a new Restaurant. After being there for two weeks, he decided to stay in Chicago and try to help the restaurant become a Chicago staple. While this meant ending the Sally's and Yale tenure the opportunity to build his own creations was too much of an offer to pass up. Piece has become just that featuring fantastic pizza like Sally's and some of the World's best beers. Piece did the impossible becoming a featured member of the cities proud pizza community without featuring the Chicago style pizza.
Dave then worked for Giordano's pizza in Chicago at it's Prudential Plaza and Rush Street locations to learn the Chicago pizza craft, and learn more about packaging and shipping food cross country. While at Giordano's Dave was recruited by his good friend Young to come help change a restaurant around and improve it's quality. The restaurant was in Lake Geneva, WI, and the goal was reached as the restaurant became a favorite of locals and tourists featuring pizza, wings, and fish fry nights. After two years, and readying the restaurant for sale, Dave decided to leave the restaurant industry all together. The decision was not truly wanted, however between a knee replacement and other ailments from always standing, rest and recouperation were needed.
One day when visiting Dunkin in Killingworth, Dave saw the for lease sign in the road, and couldn't pass it up. For three days, Dave and Deanna talked about what the place can mean for the community, there's not many meeting places, there's not many restaurants family oriented in the area, and we decided that would be our focus. Our goal is to be reasonably priced, a safe place for anyone to visit, and a place for families to come together. Our menu is very similar to Dave's last venture in Wisconsin, many of the comfort foods are available. We will have entertainment, we're reserving half of the restaurant for families to eat, artists to have a place to sell their pieces, local vendors to get exposure with their products. We are relatively new to HK, we've been here for three years, and our kids as well as us are very active in the community, and the community has been nothing but great to us. We hope to pay it back by having this space!
Brisket and Pulled Pork- Our smoked brisket and pulled pork is phenomenal with our without BBQ Sauce. Sure to be a favorite, and will be featured in our local festivals and fairs. (Specials, not always Available.)
Pizza- If you're a fan of New Haven style Apizza, you'll be a fan of ours. A dough recipe for gas ovens that's been perfected over the last 25 years to replicate New Haven. It's not burnt, it's going to be charred on the edges.
